Lotus leaf rice

Raw material:2 cups glutinous rice (320g), 3 lotus leaves, 3 jujubes, 3 chestnut kernels, 1 tablespoon pine nuts, 9 ginkgo biloba, 1 teaspoon cooking oil, salt water (1 tablespoon water, 1/4 teaspoon salt)

Lotus leaf is a common ingredient in vegetarian food, with antibacterial and antiseptic effects. Lotus leaf rice is a representative vegetarian nutritious rice, the chewy texture of glutinous rice and the light aroma of lotus leaves are endless, and it is also good to entertain guests on special days.

 Method:

1. Wash the glutinous rice, soak it in water (3 cups) for 2-3 hours, remove and drain;

2. Wipe the lotus leaves with a dry rag or kitchen paper towel, put the raw materials for making brine into a bowl, and mix well;

3. Remove the pit of the jujube, cut the chestnut kernel in half, and remove the shell of the pine nut;

4. Heat the pot, pour in cooking oil, add ginkgo, fry over low heat for about 5 minutes, put it on a kitchen paper towel, knead and peel;

5. Put water in the steamer and boil, spread the wet cotton cloth into the steamer, put in the glutinous rice, spread it out, steam it over high heat for about 20 minutes, sprinkle it with salt water evenly, and steam it for about 20 minutes;

6. After the glutinous rice is cooled, take 1/3 and put it on a lotus leaf, and take 1/3 of the jujube, chestnut kernel, pine nut and ginkgo biloba and put it on the glutinous rice. Fold the bottom of the lotus leaf upwards, fold the sides inward, and roll it up from the bottom up. The remaining two lotus leaves are treated in the same way;

7. Put water in the steamer and boil, spread the wet cotton cloth into the steamer, put in the lotus leaf rice, steam it for 30-35 minutes on high heat, and the lotus leaf rice with the fragrance of lotus leaves can be out of the pot!

 Tips:

1. The serving size in the recipe is 3 servings;

2. The calories for one person are 433 kcal;

3. Lotus leaf has antibacterial and antiseptic effects, so lotus leaf rice is not easy to deteriorate, and can be used as a box lunch for travel, mountaineering and outing;

4. Put the lotus leaf rice in a crisper box, then put it in the refrigerator to freeze, and heat it in the microwave for about 10 minutes before use, and then it can be thawed.
